Fig Smoothie

When it's hot, I don't feel like eating a big breakfast. And it's been so hot and humid, still. It's the middle of September, where's the cool fall weather? On days like this, a simple, fast and easy breakfast for me is a yogurt smoothie. I usually keep a stock of store-bought packaged berries in the freezer because they make great smoothies, but I was all out. So I went the fresh fruit route this time with what's available now. Fresh fig smoothie with a touch of honey. Just what I need in the morning. And coffee.

The key to any fruit smoothie is to always add a banana. It thickens and sweetens and adds a nice dimension without overpowering the other flavors.

Fresh Fig Smoothie

Makes about 2 servings

About 250 g unsweetened, plain yogurt

1 small banana, peeled

3 fresh figs, stems cut off and unpeeled

About 1-2 teaspoons of honey or sugar, depending on how sweet your fruit is and how sweet you like your drink

A small handful of ice


Cooking Process:

Add everything to a blender and pulse until all ice chunks have been incorporated. You may have to do this a few times and then blend continuously until smooth. If the smoothie is too thick, add some fruit juice or water. If too thin, add more yogurt or more fruit.

How to Serve:

Serve immediately.
